MAIN RESPONSIBILITIES:
• Take full charge of the daily running of the kitchen operations and kitchen staff.
• Full understanding on menu planning and costing.
• A good understanding of all financial matters relating to all outlets under control.
• Ability to change and implement new menus on a regular basis in accordance with guest’s requirements.
• Ensure that the Buffet is always laid up to specification.
• Strong guest relations and customer service will be essential.
• Ensure that the highest level of standards in the preparation and serving of food items is maintained.
• Ensure training requirements for the kitchen are ongoing and followed up.
• Responsible for all related health and safety standards insuring that we achieve a 95% hygiene rating.
• Ensure food stock tacking is done at the required times.
• Ensure all budgeted costs are controlled on a monthly basis.
• Manage the flexi work force according to operational requirements in order to optimize staff cost.
• Arrange for equipment purchases and repairs
MINIMUM REQUIREMENTS:
• Diploma in hotel management or culinary arts.
• 10 years’ experience in the Kitchen.
• Minimum of 8 years’ experience as an Executive Sous Chef in a 4-star hotel/operation.
• To have full knowledge on food production for Banqueting and restaurant facilities.
• Must have knowledge of ordering, receiving, issuing and storing procedures.
• Must have knowledge of financial literacy.
• Good Communication and Management Skills.
• Knowledge of HACCP regulations will be an advantage.
• Computer literacy.
• Excellent record of kitchen management.
